Potato Salad

Makes 4 to 5 servings


4 potatoes - cubed
3 hard boiled eggs - chopped
1/2 cup mayonnaise
1 to 2 tsp mustard
2 sweet pickles - chopped
1/4 cups chopped onion - option
salt and pepper to taste





Cube and boil potatoes until done but firm. Potatoes - boil about 15 to 20 minutes.
Cool; add potatoes, eggs, onion and pickles.
To make sauce; combine mayonnaise, mustard, salt, pepper, and about 1 Tbsp of sweet pickle juice.
Mix and taste with bit of potato or egg.
Add mustard if needed or more salt or pickle juice.
When to desired taste, mix with potato and egg mixture.
